This past weekend, I’ve been busy with catching up on yard work and trying to entertain my kids. Both jobs very exhausting – mentally and physically! Not exhausting enough to neglect making diner. Really, it’s so tempting to order take out when you are too darn tired to do anything else. That is when I turn to grilling! It’s super easy to throw some veggies and chicken on the grill because the best part is, there’s not much to clean up in the kitchen.
I’m not a big fan of Brussels sprouts but this is one way that I like to eat them – grilled! Yesterday, I grilled Brussels sprouts to go with the balsamic lemon grilled chicken breast. I added some fresh fruit and a vegetable tray as sides for my kids.
1 pound Brussels sprouts, I bought Trader Joe’s brand
1/4 cup lemon balsamic vinaigrette dressing or your choice of dressing
*The bag of brussels sprouts I had were not uniform in size. So I tried to keep the brussels sprouts as uniform as possible grouped together on same skewer to facilitate even cooking possible.
1. Heat a grill to medium.
2. Cut off the stem end of the Brussels sprouts and remove any yellowing outer leaves. I didn’t steam my Brussels Sprouts but if you want you can, place the Brussels sprouts into a large, microwave safe mixing bowl and heat in the microwave on high for 3 minutes.
3. Allow the sprouts to cool until you can handle them. Add the lemon balsamic vinaigrette dressing and toss to combine. Skewer 4 to 5 sprouts onto each metal skewer, leaving at least 1/2-inch between each sprout. Place the skewers onto the grill with stem end closest to the flame. Cover and cook for 5 minutes. Turn the skewers over and continue to cook for another 5 minutes.
4. Serve as is or for additional flavor, sprinkle some seasoning or Parmesan cheese. Enjoy!
